As a coupage, its entry on the palate is very smooth and sweet, with ripe almond and herbal notes at the front. As it moves to the back of the palate, hints of olive leaf appear, with almost imperceptible bitterness and a very light final spiciness.

Traditional mountainous olive groves with steep slopes, situated at an altitude of 300 to 700 meters above sea level.

Olives from native groves in the area are harvested from late November to January through mechanized collection and manual shaking.

Extraction occurs no later than 8 hours after harvesting, using a continuous two-phase centrifugation system.
