Tasting notes:

The organic oil presents the characteristics of a fruity green medium with an immense range of nuances. Its freshness makes it ideal to consume raw, in vegetables and salads, and for fish and grilled meats.

Preparation:

Harvesting takes place in the first days of November, separating at the farm varieties and qualities so the olives arrive to the mill to be stored separately in different bins. The milling is daily to prevent fermentation of the olive and the extraction is performed at room temperature to retain their organoleptic properties intact.

The Cooperativa San Isidro guarantees that in the cultivation of the olive grove only mechanical and biological methods have been used, without chemical fertilizers or pesticides, guaranteeing the absence of contaminants in the products, the protection of natural resources and biodiversity, and the maximum care of human health, all under the control of the CAAE Certification Service.
