► Characteristics of Sierra del Conde Extra Virgin Olive Oil
Sierra del Conde is obtained from the first extraction of the highest-quality fruits of each harvest, collected in optimal conditions directly from the tree.
These olives are always milled on the same day they are harvested, resulting in a healthy product with exceptional qualities.
It comes from a blend of Picual, Arbequina, Cornezuelo, Frantoio, and Verdial olives.

► Tasting Notes
A medium-high green fruity oil that combines the characteristics of different varieties. Sensory notes include apple, almond, green grass, and tomato.
Its slightly spicy flavor and mild bitterness give this oil a distinctive personality, highly appreciated for its gastronomic qualities.
► Production Process
Harvesting takes place between November and December, using olives at their optimal stage of ripeness. Once at the mill, a traditional three-phase system is used: milling, malaxation, and extraction at room temperature to preserve all its organoleptic properties.
