► Elaboration
Harvesting takes place in the first days of November, separating at the farm varieties and qualities so the olives arrive to the mill to be stored separately in different bins. The milling is daily to prevent fermentation of the olive and the extraction is performed at room temperature to retain their organoleptic properties intact.
