Single variety oil from the cornicabra olive produced in Madridejos (Toledo) and protected by the Montes de Toledo designation of origin. At Aceites Umbrión they make one of the best cornicabran oils in Spain. An extra virgin olive oil with body, which is intense yet slightly bitter and full of personality.

Tasting notes:
With a golden green colour, an intense aroma that reminds you of apples and a slightly bitter and spicy almond flavour. High fruity intensity.
Preparation:
In the search for quality improvement, continuous monitoring of the olive is carried out, so that harvesting is done at peak ripeness, separating soil and flight, and separating out qualities. The oil-mill has two lines for cleaning and washing the soil olive and three teams continuously weighing. Pressing occurs daily and the oil is extracted at ambient temperature so as to preserve its organoleptic properties.
