► Origin Olibaeza extra virgin olive oil characteristics
In order to obtain Olibaeza Family EVOO, an Integrated Production control system is used to carry out strict environmental and quality controls. The process takes care of the quality of the olive grove, the olives and the extra virgin olive oil.
This oil is harvested and extracted from November to January. The product is extracted from olives of the Picual variety, which gives us an EVOO with a traditional flavor ideal to be used in all kinds of dishes, both in stews and raw.

Oil of low acidity and mild flavor with a slight bitterness and spiciness, attributes that indicate its maximum quality, ideal both for crude and for fried and stews.
Its composition gives it a high resistance to oxidation and it is considered the most stable oil.
► Elaboration
Obtained from healthy olives in their optimum state of maturation only by mechanical procedures.
► Pairing
It enhances the flavor of sausages, cured meats, ham and cheeses. It is the oil to be used for frying, as it is the most resistant to heat.
It is recommended for the preparation of white and mild fish, pastas, sauces and emulsions. It is also ideal for preserving raw or cooked foods, due to its richness in natural antioxidants and high resistance to oxidation.
