Tasting notes:
Fruity intense green olive oil, with great complexity and clean green leaf tones highlighting first of all green apple, green banana, artichoke and almond essences. As second aromas, citric tones remember the lemon tree leaf.
It has a very elegant and complex taste with a pleasant and clean first contact in the mouth, remembering us the same olfactory perceptions but emphasizing the astringency of Cornezuelo Artichoke.
With a light bitter and spicy chilly taste typical of Hojiblanca variety that you can taste later at the palate.

Preparation:
Proceed to clean and wash the olives, then ground in hammer mills, always within 24 hours from receipt to preserve all its properties. The paste obtained is taken to a blender where it is subjected to a shake which favors the coalescence of the oil provided at a temperature of 23 ° C (cold extraction ). It is at this stage where the oil is separated, which is stored for subsequent filtering and packaging.
