► Tasting Notes
A complex combination of green aromas and fresh fruits. Aromatic herbs such as basil and fennel blend with notes of tomato and avocado, alongside hints of apple, banana, and ripe almond.
► Production Process
Harvest takes place during the month of October, at the olives’ optimal point of ripeness. Once at the mill, the olives are quickly processed using a continuous cold-extraction system (temperatures between 18°C and 20°C).
► Pairing Suggestions
Recommended mainly for raw use, whether on cold, warm, or hot dishes. Its intensity enhances the flavor of cured hams, cured meats, sausages, and cheeses. It can also be enjoyed in salads, salmorejo, and on toast.
