A single varietal, early harvest, extra virgin olive oil that year after year is recognised in the most renowned international contests. An oil unlike that from any other region, an oil of exceptional quality whose origins are unmistakable.
Origin:
Carcabuey (Córdoba). PDO Priego de Córdoba.
Variety of olive:
100% Picudo. Acidity: 0,17º.
Tasting notes:
Medium fritiness with mature tons of green olives and almond. On the nose, notes of green grass, apple, and olive tree leaf. On the palate it has a sweet entry, developing a peppery feel and agreeable bitterness at the end.
Elaboration:
Harvest takes place in the first half of November and it is manual, directly from the tree at their optimum ripeness. Its preservation is done in stainless steel tanks in fully air-conditioned cellar.
Recomended uses:
Recomended to be used raw, either applied onto cold, warm or hot food. Salads, bread and oil, carpaccios, vegetables, steamed, risottos, grilled, baked or roast fish or meat. Ideal for frying, as it provides a very crisp texture. Suitable for tomato sauces and pasta sauces.
