Coupage Empeltre + picual. Acidity: 0.20º.
It is an oil of medium intensity and fruity taste with a slight bitter and spicy touch of the early harvest, with notes of fresh grass, artichoke and nuts that persists in the mouth.
Early collection during the month of November. Immediate grinding (less than twelve hours) on the same day of collection. Cold extraction by centrifugation.
Recommended especially for fish and seafood, vegetables, salads, white meat, pasta, sauces and emulsions, fresh cheeses, pastries, chocolate, fruits and honey.
