Picual monovarietal. Acidity: 0.11º.
It is an intense oil with a characteristic fruity flavor without acidic sensations, with a slight bitter and spicy touch characteristic of the early harvest, and notes of fresh grass and green fruits, which persist in the mouth.
Early collection during the month of November. Immediate grinding (less than twelve hours) on the same day of collection. Cold extraction by centrifugation.
Recommended especially for salads of raw vegetables, boiled or roasted vegetables, toast, seafood, carpaccio, background mirror in the pates, red meats, pastas, sauces and emulsions, marinades giving a good vinegar replica, cheeses, pastries, chocolate , fruits and honey.
