Of intensity and fruity flavor of the beginning of the early harvest, with sweet notes and aromas of fresh grass, almonds and walnuts that come from a variety little extended and extraordinarily appreciated. Of color that ranges from intense yellow to golden.
Picking up time during the month of November. Immediate grinding (less than twelve hours) on the same day of collection. Cold extraction by centrifugation.
Recommended especially for grilled fish, white meats and fresh cheeses. It can also be added to creams, soups, or purées. And for the preparation of all kinds of desserts.
