Bright green colour, with an intense fruity flavour of fresh olive and a great complexity of herbaceous an fruity aromas. The unripe banana and almond flavours stand out, and to a lesser extent then unripe tomatoes and apples. It is a fragrant and balanced oil of great complexity thanks to the many positive and noticeable characteristic.
The fruit is harvested early, to obtain the best oil, the production is from a day of harvest in late October. To produce one litre of Pagos de Toral oil, 12 to 13 kilos are required, as opposed to the 4 kilos that are usually used, to improve the quality of oil. Milling is performed by grinders, wich break down the plant tissue and release the oil to form a homogeneous paste. The resulting product is transferred to th thermal mixers, where a homogeneous mass is produced with a recommended temperature of 25º to obtain quality oils; the whole process under the supervision of master millers. This paste is subject to cold extraction to extract the oil.
