Harvested in October and cold extracted, Conde Argillo Early Harvest EVOO has an intense green color and a fresh and fruity aroma and flavor, reminiscent of freshly cut grass and tomato plants. An authentic olive juice obtained in the first days of harvest.

Aromatic, harmonic and balanced olive oil, with intense fruity of green olives. Fresh taste of herb and grass, leaves, broom and green tomato. Slightly bitter and spicy.
Early harvesting pursues the objective of selecting the best olives, the ones that are turning from green to purple at the optimal maduration point. The olives are ground the same day and cold pressed -under 22º- to prevent their oxidation. The conservation at the constant temperature of 20º is the final point of the production process, with the objective of keeping its fresh aroma and flavour.
Recommended to be used raw, either applied onto cold, warm or hot food. Salads, bread and oil, carpaccios, vegetables, steamed, grilled, baked or roast fish or meat, and also recommended to be used for frying, for sautés, as an ingredient in traditional cooking.
